Healthy, Wealthy and Wise
Great taste and healthy cooking doesn’t mean you have to use expensive ingredients. This recipe is a perfect example of that. Not only is this dish a great one to cook when you’re trying to eat healthy, but also it is very economical. Like traditional pasta, you can get quite a bit of bang for your buck with zucchini noodles…or Zoodles, as I like to say.
When picking out zucchini for this recipe, I tend to look for larger zucchini. Generally speaking, most zucchinis are about 6-7 inches, which makes them nice and tender for most dishes.
For this dish, though, a touch larger is no problem at all. It actually helps to have a larger zucchini because it will give you longer strands of zoodles, which is nice if you’re used to traditional spaghetti or other long noodles. The thing about larger zucchinis, though, is that they can seeds that are larger; they can also be a bit tougher than their smaller counterpart. Again, though, for this dish, that no problem. Because we’re making zoodles, the smaller cuts will help to break down some of the fibrous nature of a larger zucchini, while allowing them to remain a bit al dente! For that reason, I suggest looking for a zucchini that is about 7 to 9 inches.
Making the Zoodles
When it comes to making the Zoodles, it couldn’t be easier. I am one who loves multi-function machines, so traditionally, I’ll use my mandoline for this recipe, which works great. As Zoodles have become more popular, there are several options out there now, many of which are very economical. Any way you cut it, it’s going to be good. And, honestly, in a pinch, you could use a vegetable peeler to hand-craft Fettucine Zoodles!
A Touch of Wine
I love cooking with wine and the depth that the white wine creates in this dish is fantastic. Once you remove the chicken from the pan, you’re going to deglaze the pan with white wine.
Deglazing a pan just means that you’re going to add the wine to the hot pan to help pull all the great caramelized bits from the bottom of the pan. Those little bits are like gold and they helps to infuse that great flavor back into the sauce, while helping to thicken it at the same time. As the wine reduces, it’s going to add some complexity to the dish, balancing with the garlic and creating additional freshness that just perfect for summer.
