Fretalian Onion Soup is shout out to both the French and Italian sides of my family.  There’s nothing better to bring a family together than a good bowl of soup with lots of melty cheese on top! That's something everyone can agree on!  Dare I say Bon Appetito! 

Ingredients

SO WHAT YOU'RE GONNA NEED IS:

- (2) medium Onions: Available Here

- (2) Tablespoons Butter: Available Here

- (2) Tablespoons Olive Oil: Available Here

- (1) Tablespoon Flour: Available Here

- (2) Tablespoons Parmesan Cheese: Available Here

- (1/2) teaspoon Dried Thyme: Available Here

- (2) Dried Bay Leaves: Available Here

- (1/8) teaspoon Black Pepper: Available Here

- (4) cups Beef Broth:  Available Here

- (3/4) cup Dry White wine: Available Here

- (1) loaf French Baguette: Available Here

- (4) slices Melting Cheese (Provolone, Fontina, Havarti): Available Here or  Available Here

Instructions

Prepare the Soup

1. Prepare the onions by slicing them in half lengthwise through the root. Cut off the end that is not the root. Place them cut side down and, keeping the root intact, cut as many 1/4 inch slices down the length of the onion as you can. Cut off the root and separate the onions pieces.

2. In a Dutch Oven (or large pot) over medium heat, add the Olive Oil and Butter. Let the Butter melt.

3. Add the sliced Onions.

4. Add the Bay Leaves, Black Pepper and Dried Thyme. Stir.

5. Let the Onions cook for about 25 minutes, stirring frequently, until they are soft and tender and beginning caramelize and turn a golden brown.

6. Remove Bay Leaves

7. Add Flour. Stir

8. Add White Wine and reduce by half.

9. Add Beef Broth

10. Cook for about 15 minutes

Make the Crostini

1. Cut 1/4 in slices of Bread (at a bias). Top with Parmesan Cheese and toast until golden brown.

Put the Soup Together

1. Dish up Soup into large Coffee Mugs or Soup bowl that you can put in the oven.

2. Float Crostini on top of the Soup.

3. Top with Cheese. Place under Broiler until the cheese is thoroughly melted and begins to run over the sides of the mug.

4. It's ready to serve! Top with a fresh sprig of Thyme if you want to get extra fancy.
