This beauty got first prize in the NASA Johnson Space Center Annual Chili Cook-off.  Government-tested.  Astronaut-approved!  It's out of this World good!

Ingredients

SO WHAT YOU'RE GONNA NEED IS:

- (1) lb. Top Sirloin: Available Here

- (1) Green Pepper: Available Here

- (1) Onion: Available Here

- (2) cloves Garlic: Available Here

- (2) Tablespoons Olive Oil: Available Here

- (2) Tablespoons Cilantro: Available Here

- (1/2) Jalapeño Pepper: Available Here

- (2) cups Beef Broth: Available Here

- (1) 28 oz. Can Diced Tomatoes: Available Here

- (1/2) 6 oz. Can Tomato Paste (about 3 oz.): Available Here

- (1 1/2) Tablespoons Chili Powder: Available Here

- (1) Tablespoon Cumin: Available Here

- (1) teaspoon Oregano: Available Here

- (1) teaspoon Sugar: Available Here

- (To taste) Salt: Available Here

- (To taste) Pepper: Available Here

- (3) Tablespoons Parmesan Cheese (optional): Available Here

- (1/4) cup Beer (optional): Check your fridge…there might be one in there.

Instructions

Prepare the Vegetables

  1. Roughly chop Green Pepper into bite sized pieces.
  2. Chop Onion.
  3. Roughly Chop Cilantro.
  4. Finely mince Jalapeño Pepper
  5. Press Garlic

Prepare the Meat

  1. Season both sides of the Top Sirloin liberally with Salt and Pepper
  2. Cut Sirloin into cubes.

Take it all to the Stove

  1. Add Olive Oil to a Dutch Oven over medium-high heat.
  2. Add Sirloin and sauté until browned. Remove and drain off excess fat.
  3. Add a little more Olive Oil (if necessary) to Dutch Oven.
  4. Add Green Pepper, Onion, Garlic, Salt and Pepper. Cook until vegetables soften.
  5. Add Sirloin back in.
  6. Add Oregano, Cumin and Chili Powder. Sauté for about a minute
  7. Add Beef Broth, Diced Tomatoes, Tomato Paste, Sugar, Jalapeño and Cilantro. Bring to a boil.
  8. Cover and turn stove down to medium. Let simmer for at least an hour.  (Longer will allow the meat to become more tender)
  9. If desired, add Beer and let cook for at least 15 minutes.

Serve it up. Garnish with Parmesan cheese if desired.  Enjoy!
